Inzalo is an agave spirit with an identity of its own. Not tequila. Not mezcal. 

Crafted from wild red agave found nowhere else on earth, often more than 20 years old, it expresses the purity of the plant and the land it grows on.

Defined by notes of sweet and floral spice, caramelised sugar and a saline finish, Inzalo’s Batch One enhances rather than dominates. Neat, it reveals sweet agave and mineral complexity. With food, it complements bold flavors without competing. Behind the bar, it anchors classics and invites experimentation.

THE RED AGAVE

Influenced by ancient seabed soils and intense sun, these agaves form red tips, standing distinct amongst the landscape. In a region where little else grows, these plants thrive—and when distilled, deliver sweet spice and mineral notes born from the land itself.

THE PROCESS

We craft Inzalo with restraint. Wild agave, spring water, and wild yeast are all that are used. Through long, low temperature cooking and gentle extraction, we capture a juice that authentically expresses the plant and the land. Native wild yeasts drive fermentation, imparting a delicate creaminess to the taste and defining Inzalo’s distinctive flavor profile.

THE STORY

We set out to create the greatest agave spirit outside of Mexico. In a remote South African valley, we discovered agaves descended from Mexico that had evolved over hundreds of years in ancient soils—becoming something entirely distinct. We built our own production process, unbound by tradition, to express this unique character. To honor both its origins and its evolution into something entirely new, we named it Inzalo, meaning “descendant” in Zulu.
